Bok Choy, Celery and Lemon Smoothie


  • 2 leaves Bok Choy
  • 2 stocks Celery
  • 1 whole Lemon
  • 1 tbsp Kefir
  • 1 pinch Salt
  • 1 cup Blueberries
  • 1/2 Avocado high in potassium





Almond Joy Cookies

The best gluten free, potassium & protein rich chocolate chip cookies in Las Vegas Nevada – America!
Servings: 40 cookies

  • 1 cup Coconut, shredded, toasted
  • 1 cup Walnuts, toasted and chopped
  • 2-1/2 teaspoon Gelatin, 1 packet (0.25 oz), dissolve in 1/4 cup cold water, stir with fork about 2 minutes. Alternative can use vanilla pudding.
  • 2 oz Spinach, fresh, coarsely chopped (about 1 cup packed)
  • 1 cup Beet, fresh, medium size or 1/2 of large size, coarsely chopped Prefer flavor of gold beet but red beet acceptable
  • 1/2 cup Daikon, coarsely chopped
  • 1/4 cup Coconut oil
  • 1/2 cup Coconut sugar
  • 1/2 cup Coconut water alternative is to use 1 cup of coconut milk
  • 1/2 cup Butter, room temperature soft (1 stick)
  • 1/2 teaspoon Baking soda
  • 2 tablespoon Arrowroot powder
  • 1 teaspoon Cacao powder
  • 1/4 cup Inulin powder a prebiotic and sweetener made from chicory root. Just Like Sugar is made from inulin
  • 1 teaspoon Salt
  • 2 teaspoon Vanilla extract
  • 2 teaspoon Almond extract
  • 2-1/2 cups Almond flour might need 3 cups.
  • 1/4 cup Coconut flour optional
  • 1/2 cup Hemp protein powder from Trader Joes
  • 3 each Eggs, lightly beaten
  • 1-1/4 cup Chocolate chips, semi-sweet


  • Take eggs and butter out of the refridgerator to warm to room temperature.
  • In a small bowl, add 1/4 cup of cold water. While stirring with a fork, slowly pour in gelatin. Mix until it thickens, about 3 minutes. Set aside.
  • Heat oven to 375deg F. Place coconut and spread out in an oven pan. Spread walnuts on top of the coconut. Insert in oven to light toast (until coconut is slightly brown, about 3-4 minutes). Remove from oven and set aside.
  • Add the following to blender (Vitamix): spinach, beet, daikon, coconut oil, coconut sugar and coconut water. Blend to smooth consistency. Set aside.
  • Add the following to a KitchenAid stand mixer bowl: butter (cut into smaller size to improve mixing if not soft), baking soda, arrowroot powder, inulin, salt, vanilla extract, and almond extract. Mix.
  • Add gelatin and contents from Vitamix blender to stand mixer and mix until incorporated.
  • Add almond flour, coconut flour and hemp protein powder to mix.
  • Add beaten eggs and slightly mix.
  • Add toasted walnuts, toasted coconut and chocolate chips. Be careful not to over mix.
  • Using a 4 tbsp (2 fluid ounce) medium cookie scoop, place on parchment paper lined baking/cookie sheet about 2-3 inches apart (get 12 cookies per baking sheet). Bake at 375deg F for 16-18 minutes, or until edges are slightly browned. Remove to a plate and allow to cool. Serve with a glass of almond milk and enjoy your potassium & protein rich, gluten free Christmas almond joy cookies.

  • 3/4 cup Walnuts, toasted and chopped
  • 1/4 cup Coconut, shredded, toasted
  • 1/2 cup Butter
  • 1/4 cup Coconut oil
  • 3/4 cup Coconut sugar
  • 1/4 cup Inulin
  • 1 teaspoon Vanilla extract
  • 1 teaspoon Almond extract
  • 3 each Eggs
  • 1/2 teaspoon Baking soda
  • 1 teaspoon Salt
  • 1/2 teaspoon Arrowroot powder (optional binder)
  • 1 packet Gelatin
  • 3 cups Almond flour

    Same Day Costco.com – Pure Vanilla Extract ($14 for 16 fl oz, item# 1072687), Butter ($12.86 for 1 lb, item# 41114), Walnuts ($9.35 for 3 lbs, item# 36285)
    Winco – in their bulk section, sells unsweetened coconut, coconut sugar and arrowroot powder (bulk spices section).
  • Heat oven to 350℉. Spreadout coconut in oven pan, then top with walnuts. Insert into oven to lightly toast (about 3 minutes). Remove from oven and coarsely chop if using whole walnuts. Set aside. Alternative is to toast on the stove top. After toasting add coconut oil to coat.
  • Add the following to a KitchenAid stand mixer: butter, coconut oil, coconut sugar, vanilla extract, optional arrowroot powder and mix. Add gelatin, baking soda and salt, mix. Then beaten eggs and mix.
  • Add almond flour 1 cup at a time while mixing. Add toasted walnuts, shredded coconut and chocolate chips, slightly mix.
  • Using a 2 tbsp medium cookie scoop, place on parchment paper lined baking/cookie sheet. Place about 2-3 inches apart, typically 12 cookies per sheet.
  • Bake in oven set to 350deg F for 11-13 minutes or until the edges are lightly browned. Remove to a plate to cool.
  • Serve with a glass of almond milk and enjoy your gluten free almond flour chocolate chip cookies.
