- in their bulk section, sells unsweetened coconut, coconut sugar and arrowroot powder (bulk spices section).
Take butter out of the refrigerator and allow to warm up and soften to room temperature.
Heat oven to 350℉. Lightly toast walnuts in oven (about 3 minutes). Remove from oven. Set aside. Alternative is to toast on the stove top.
Add the following to a KitchenAid stand mixer and mix: butter, coconut oil, coconut sugar, inulin and brown sugar.
Using cold eggs, break the yoke using a fork. Add to the stand mixer along with almond and vanilla extract. Slightly mix.
In bowl combine all the dry ingredients (except 1 cup of almond flour): optional arrowroot powder, baking soda, gelatin and salt, mix.
Add almond flour 1 cup at a time while mixing. Add toasted walnuts, shredded coconut and chocolate chips, slightly mix.
Using a 2 tbsp medium cookie scoop, place on parchment paper lined baking/cookie sheet. Place about 2-3 inches apart, typically 12 cookies per sheet.
Bake in oven set to 350deg F for 11-13 minutes or until the edges are lightly browned. Remove to a plate to cool.
Serve with a glass of almond milk and enjoy your gluten free almond flour chocolate chip cookies.
